What You'll Need
- 1 Cup Almond Flour
- 1/2 Cup Coconut Flour
- 2 TSP Harmonic Arts Matcha Mind Herbal Latte
- 1 TSP Harmonic Arts Lion's Mane Mushroom Powder
- 1/2 TSP Baking Powder
- 1/4 TSP Salt
- 1/2 Cup Melted Coconut Oil or Butter
- 1/3 Cup Maple Syrup
- 1 TSP Vanilla Extract
- 2 Large Eggs
- Optional: White Chocolate Chips or Nuts of Choice
How to Make Your Matcha Mind Blondies with Lion's Mane
- Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
- In a bowl, whisk almond flour, coconut flour, Matcha Mind, Lion’s Mane Powder, baking powder, and salt.
- In another bowl, mix melted coconut oil, maple syrup, vanilla, and eggs until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until smooth. Fold in chocolate chips or nuts if desired.
- Spread the batter evenly into the prepared pan.
- Bake for 18–22 minutes or until edges are golden and a toothpick comes out clean.
- Cool, slice, and enjoy a brain-boosting treat - the perfect pick-me-up for an afternoon slump.
